The National Restaurant Association has completed its annual survey of more than 1,500 professional chefs from the American Culinary Federation to determine “what’s hot” in restaurants at the moment. Knowing those results, we can speculate on what the top restaurant trends for 2011 have been.
As the year draws to a close, we are seeing that health and nutrition are among the biggest trends for the year. Locally grown produce and locally sourced meat and seafood have become increasingly popular, even among parents ordering for their kids. Creative ways to imbibe are also topping the list.
Among the most popular restaurant trends for 2011, based on the statistics from the National Restaurant Association survey, are:
1. Artisan liquor and culinary cocktails
2. “Back to Basics” ingredients
3. Ethnic breakfast items
4. Gluten-free/allergy-conscious menu items
5. Healthy meals for children
6. Locally grown food
7. Locally sourced meats
8. Locally produced wine and beer
9. Smaller portions / smaller prices
10. Sustainable seafood
For the grownups, there are some fun and eco-friendly trends on drink menus. For example, restaurants and bars are offering an abundance of micro-brewed beers across the nation, as well as locally produced wine in regions typically not known for their vineyards. Pairing beer with meals rather than wine is also more popular. Creative liquor and cocktails are becoming increasingly popular, too, as liquor producers come up with new flavors to infuse into their products, ranging from fruits and vegetables to pepper and other spices. “Mixologists” are combining culinary flavor profiles with their customers’ favorite drinks, as well, mixing concoctions like blue cheese martinis and cake frosting-flavored cocktails.
On the healthier side of things, more and more diners want to know where their food came from and are demanding a greater array of locally grown and sustainable menu items. Fruits, vegetables, meat and seafood are among the biggest trends in locally grown, raised and sourced foods, and local artisan cheeses are also making a big impact on the culinary scene. Parents are more concerned about the health of their children, as well. We are seeing that manifested in the great increase in nutritious menu items for kids.
Creative food choices round out the list, including ethnic-influenced breakfast foods such as chorizo and eggs or ginger-infused maple syrup, and a seemingly endless list of ethnic fusion foods. It has certainly been an interesting year for restaurant trends.
