It is important to consider this, especially in today’s climate as after all, you don’t want traces of horse meat turning up in your produce when the food inspector arrives, or even worse, the mother-in-law!
Kitchens and food preparation areas must be kept scrupulously clean especially if the general public are, in any way, involved.
What’s more, don’t be fooled just because your work surfaces look clean-it doesn’t always mean that they are. After all, when did you last spot a bacterium with your naked eye? Bacteria can turn up anywhere in your kitchen. They can sit on any surface and can easily contaminate catering equipment, floors, walls, tables and other surfaces and implements. You name it and they can harbour it. Only a strict cleaning regime will keep bugs at bay.
A Clean a Day Keeps Illness Away
Well, there are lots of ways to keep your kitchen and catering equipment clean. There is the somewhat traditional disinfectant on a clean cloth and with this option there are both pros and cons. On the plus side it’s a cheap solution and with an array of disinfectants out there something should fit the bill. However, since bacteria hide in the most inaccessible and unlikely places; they are sometimes hard to reach.
Your best solution in this case is probably to use a steam cleaner. Not only will this zap any bugs, but it will also remove grease which, as we all know, has a habit of getting everywhere in the kitchen. Steam cleaners blow out pressurised steam heated to up to 170 degrees and of course, steam can reach all those nooks and crannies in your kitchen and in and around all catering equipment.
As well as work surfaces and catering equipment, you will need to keep all floors clean. You could go down on all fours with a scrubbing brush and pail – but why put yourself to such bother. Invest in a scrubber-drier. This is a very useful piece of equipment. Essentially, it is a system of rotating brushes and squeegees. The machine applies water and cleaning solution to the floor, does all the hard work and it will dry the floor! How good is that!
Practice would ensure that a schedule and a routine are followed. This might include several stages. These might include a pre-clean, main clean, rinse, disinfectant, final rinse and some means of drying. It is also important that component parts of specialised equipment are not overlooked. So look out for valves, tanks, pipes, pumps and heating units etc.
Cleaning is a vital part of any kitchen regime for without it disease and illness can result and vermin can spread. There is much professional help around for caterers who wish to keep to their food preparation areas up to the mark and their customers happy.
