We have what we so called months of rain here in the Philippines and who doesn’t want to eat dishes that will satisfy your body and hunger like sopas and any other soup-like dishes. This chicken recipe called chicken arroz caldo is is nice to eat onwards after cooked or when it’s still hot because it’s a soup-like dish, you must try it also. You will highly appreciate it especially when it rains and also a perfect dish for breakfast. I admit that there are so many chicken recipes here in the Philippines but this chicken arroz caldo is the best during rainy season. I want you to try this dish too as well as I do and I’m sure it will fulfill you! Here’s how it is done.
Cooking oil
2 tbsp. garlic, sliced
1 piece red onion, minced
2 tbsp. ginger, minced
1 kilo Chicken, cut into servings
2 cup uncooked rice
1/3 cup fish sauce (Patis in tagalog)
12 cups of water,
2 tsp kasuba or local sacron
¼ cup spring onions, chopped (for topping)
¼ cup garlic, fried minced(for topping)
5 piece egg, sliced, hard boiled (for topping)
Procedure:
Let us now cook our chicken arroz caldo, I prefer casserole when cooking this food but you can also use sauce pan if you want. so first, boil your cooking oil using a casserole and when heat put the onions, garlic and also ginger then mix it and wait for about two minutes or when it is while pale color already you can now add the chicken and mix it to combine with the onions and the other so it will create a nice aroma in the chicken. Also we’ll going to mix it to cook the chicken and hold it up until it’s in pale white. After that we can now add the uncooked rice and stir it together with the chicken and then let’s also add the fish sauce of patis in tagalog. Next to add is the water, wait until it boils and the rice was bloomed. Stay stirring, It may take about 20 minutes and after it you may now serve the dish. But wait, it doesn’t end there yet. Now we are going to add the toppings in to your arroz caldo so it will look pleasant to eat. Put the sliced eggs in the middle part of the served arroz caldo and form a circle path on it. Then add the fried garlic and also the spring onions. You can now eat your chjcken arroz caldo. Enjoy and have fun eating!
