SQF 2000 flooring standards and how it relates to the food and beverage processing industry

What is SQF 2000 ?

This code is for manufacturers, distributors and brokers of food and beverage products, and can be used by all sectors of the food industry.

Certified SQF 2000 suppliers receiving raw materials from suppliers, who have implemented the SQF 1000 code, can ensure that through these complementary systems, the product is traceable from the producer to the consumer.

What is SQF 1000?

This code is for producers of primary food products, and enables them to meet product trace, regulatory, food safety and commercial quality criteria. In addition, this code allows primary producers to demonstrate that they can supply food that is safe and meets the quality specified by a customer.

What is SQF standard?

The SQF Program is comprised of two codes: SQF 1000 and SQF 2000. Both codes were designed recognizing that risk management can be applied to all products, but that all processes do not lend themselves to a complete HACCP (Hazard Analysis and Critical Control Point) system.

The SQF 2000 is quality management system used to verify the level of implementation of a specific food safety and quality plan by a food manufacturer/supplier. Verifications are performed by a third-party audit. All auditors are certified and registered by the Food Marketing Institute, the entity that administers the SQF2000 system.

SQF 2000 code documents are based on proven HACCP methods used by the industry and are designed to provide guidance on increased food safety and quality. Code documents include a section on guidance and specifications for facility design. The following sections reiterate some of the most important facility design considerations as noted in the SFQ 2000 code.

Key elements of SQF include: 5.2.1: Materials and Surfaces Product contact surfaces and those surfaces not in direct contact with food shall be constructed of materials that will not contribute a food safety risk.

5.2.2: Floors, Drains and Waste Traps

5.2.2.1: Floors shall be constructed of smooth, dense impact resistant material that can be effectively graded, drained, impervious to liquid and easily cleaned.

5.2.2.2: Floor Drainage - Floors shall be sloped to floor drains at gradients suitable to allow the effective removal of all overflow or waste water under normal working conditions.

5.2.2.3: Drains - Drains shall be constructed and located away from any food handling area or entrance to the premises.

5.2.2.4: Waste Traps - Waste trap systems shall be located away from any food handling area or entrance to the premises.
