After germs enter your body, it takes some time for the disease to break out and this intermediate period is called incubation period. The span varies from hours to years depending on the health of the person, the nature of the infecting element and the amount of food taken in. After the malice is done, you can find symptoms like vomiting, nausea, gastroenteritis, fever, diarrhea, abdominal pain and headache. Some diseases with long incubation period cause symptoms of ‘stomach flu’. Food poisoning may sometimes be fatal and more so if you have week immunity.

One of the major reasons behind food borne illness is bacteria. One specialty of bacterial infection is that its incubation period is longer. Among the most notorious bacteria, Salmonella Typhimurium can be infected to our body from the consumption of improperly cooked eggs.

Some other bacteria are Escherichia coli 0157:H7, Clostridium perfringens, Vibrio cholerae, Streptococcus, Staphylococcus aureus, Vibrio vulnificus, Plesiomonas shigelloides etc. Sometimes, the bacteria do not attack directly. In such cases, they excrete exotoxins. Some dangerous exotoxins are Clostridium perfringens and Clostridium botulinum. Another cause is the infection of Mycotoxins that can cause massive epidemic. These Mycotoxins can be categorized in Aflatoxins and Altertoxins. These toxins are most commonly found in the foods like oilseeds, peanuts, wheat, maize, milk, ragi, and tomatoes. Several other nutritious foods should be taken in order to prevent the spread of germ.

Unlike bacteria, viruses take a shorter time for incubation and cause major food borne diseases. Some common viruses are hepatitis A, Norovirus and Hepatitis E. Among them Hepatitis A takes longer time to break out and causes serious damage in the liver resulting in jaundice. These viruses have to be prevented from causing harm to the body. They are even capable of snatching the life of a person.

Apart from these, there are parasites, nematode, protozoa and other amoeba that can well create trouble. Then there are natural toxins, which comes from the animals who acquire it from the poisonous foods to which they are immune. The recent trend of globalization of food as well as its increasing demand has multiplied the chance of food borne diseases. In 2000, more than 2 million people died because of this. So, urgent steps are required to get a hold of it.
