To supply ourselves with good oils we should know what are oils? Oils are the liquid form of the fats at room temperature. They are derived from two sources.

· The plants - such as the oils derived from the olive, corn, soybean, sunflower, walnut, and others. There are other types which contain oils not special to them such as avocado, olives, and nuts.
· Fish sources -they are the best source of healthy good oils.

A lot of oil sources also supply vitamin E which is an important anti-oxidant.

Fats are essential nutrients. They are composed of fatty acids which are classified into saturated fatty acids and unsaturated fatty acids. The classification occurs according to the presence of the double bond in their structure. The presence of the double bond makes it unsaturated fatty acids, the number of the double bonds make it mono-unsaturated fatty acids if it contains one double bond, or poly-saturated fatty acids if it contains more than one double bond.

Omega 9
Omega 9 is a mono-unsaturated fatty acid, and both omega 3 and omega 6 are essential poly-unsaturated fatty acids.

What makes the oils healthy and good depends on the type of the fatty acids in their contents. Not all types of oils are healthy. There are many types which have harmful effects on your health such as the saturated fats and Trans fats.

Fish contain the healthiest fatty acids naturally - omega 3 fatty acids. They are essential fatty acids because our body can not synthesis them. The omega 3 fatty acids are heart protective. The other sources of omega 3 are flaxseeds, soybean, and walnut.

Omega 6
Omega 6 is considered as pro inflammatory which enhances the inflammation and increases the pain sensation. So the inflammatory effect of omega 6 should be balanced by the anti inflammatory effect of omega 3.

Coconut oil
Coconut oil is one of the good oils. It is less susceptible to be converted to bad oils as it has low degree of oxidation. It is also delicious and enhances the immune response.

Olive oil
Olive oil contains phenols, which are strong anti-oxidants. The main component is the mono-unsaturated fatty acids. It is also found to have a protective effect on the heart. Also it decreases the LDL cholesterol which is harmful to health, and increases the HDL cholesterol which is good for health. At Oxford University, researches proved a low risk of the bowel cancer with olive oil rich diets.

Flaxseeds
Flaxseeds are not only important as source for oils but also as source for fibers.
The flax supports the cardiovascular health and increases the immunity and enhances healthy skin and stabilizes the blood sugar.
