Many Uses for the Caja China Roaster

Most people use their Caja China box primarily for cooking a whole pig. But you can cook a wide variety of other meats in the Caja China roaster and here are just a couple of recipes for doing so.
Many people like to use their La Caja China style Caja Asadora Roasting Box as a pig roaster, but one of the most exciting parts of owning one is branching out and trying different ways to cook other types of meats.

If you are a fan of Ribs, the Caja china box is a great option for smoking ribs and, because of its large size, you can cook a substantial amount of ribs at one time. Here is one popular recipe for cooking ribs in your La Caja China Roasting Box. Start by using marinated ribs, which you can prepare the night before. Just remember to let the ribs stand at room temperature for an hour or two before you begin the roasting process, then:



1. Place ribs on top of the rack bone side up.s

2. Attach the top rack using the 4 S-Hooks.

3. Place ribs inside the box bone side up.

4. Cover your La Caja China style roasting box with the ash pan and charcoal grid.

5. Add 8-10 lbs. of charcoal and light up.

6. Once lit (20-25 minutes), spread the charcoal evenly over the charcoal grid.

7. Cooking time starts right now.

8. After one hour, open the Caja China grill by removing the complete set of ash pan and grid together and place it on top of the long side handles.

9. Flip the ribs bone side down.

10. Cover your Caja China style roaster again with the ash pan and charcoal grid and add 10 lbs. of charcoal.

11. Cook for an additional 30-45 minutes until done.



Here’s another great recipe for cooking chicken, or shall we say “chickens” in your Caja China roasting box: As is the case with a whole pig or ribs, you’ll want to marinate the chicken or chickens the night or several hours before you start the roasting process. Here is what you’ll need to make a delicious marinade for your chicken:

1/2 cup Cajun seasoning
1/4 cup paprika
1/4 cup brown sugar
1/3 cup mustard powder
1/4 cup chili powder
1/4 cup ground cumin
2 Tbs ground black pepper
2 Tbs garlic powder

And here are your steps for cooking your chicken in your Caja China roasting box:

Mix all ingredients together.
Sprinkle the seasoning to taste over the both sides of the chicken.
Another great idea is to line the drip tray with vegetables so that they cook in the juices that fall from the chicken during cooking!
Follow the same cooking instructions as you would for other types of meat until the chicken has been roasting for one hour.
At that point, flip the chicken over and allow to cook for another 40-50 minutes until completely cooked.

Now it’s time to sit down and enjoy your delicious chicken!



And, here’s a classic recipe for cooking MOJO CUBANO Pig also known as Cuban Style Roast. For the Marinade you will need:

· Garlic

· Salt

· Whole Black Pepper

· Oregano

· Sour Orange Juice

Now, here’s now to prepare it:

· Use 4 to 5 large garlic heads, or 70-80 cloves.

· Use a mortar to smash it. Add 10 cloves, 1/2 teaspoon of salt, some pepper and oregano.

· Smash well until a paste is formed. Put this paste in a bowl. Continue until all the garlic is smashed.

· Add the orange juice and let it rest for 30 minutes.

· Season your pig with the mixture.

Now it’s time to roast the pig just as you would following your Caja China cooking instructions. This is a delicious and tasty recipe for roasting pig that all of your friends and family are going to enjoy!
