By Japanese Cuisine, it is meant the traditional style food that existed in Japan before the national seclusion ended in 1868. In a broader sense, one can also include foods, the ingredients or cooking methods of which were brought in from abroad and were further developed by the Japanese and made them as their own food.

Japanese Food is known for the emphasis that they make on the seasonality of food, the ingredient quality and the presentation style. The cuisines of Japan are based on a combination of staple foods which is normally rice or noodles, and is complemented with soup. To this is added Okazu, which is a dish that is prepared from fish, meat, tofu, vegetables and similar ingredients and is used to add taste to the stable food. These dishes are generally eaten with dashi, misho and also soy sauce and are known for their low fat with high salt content.

In any typical Japanese meal, one will come across different okazu that accompanies the cooked Japanese rice, a soup bowl along with some tsukemono or pickles. The usual standard dish includes three okazu which is called ichijū-sansai or one soup with three sides. In this dish, different techniques are used for the three okazu . These could include any three style of cooking from raw (sashimi), simmered, deep-fried, dressed, grilled, steamed or vinegar used.

The cooking books of Japanese cuisines show the Japanese style of meal. These cookbooks have chapters that are organized following the cooking techniques and not written according to ingredients used. One will find chapters that are devoted to sushi, noodles, sweets, soups and rice.

Japan being an island, the cuisines of Japan have much of seafood. There is less of meat eating due to the restriction put by Buddhism. However, the present generation like a lot of meat food. However, it is rare to find strictly vegetarian dish in Japan as vegetable dishes get the flavor of dashi stock, which is prepared with dried tuna flakes. One particular exception vegetarian dish that was developed by the Buddhist monks is shojin ryori. However, this particular dish that is available at different public places consists of non-vegetarian ingredients in them.

Another important element of Japanese cuisines is Noodles that are eaten instead of rice based meal. The traditional noodles found in Japanese homes are Soba which is the grayish brown noodles prepared from buckwheat flour along with udon that is wheat noodles. These noodles are taken either hot or cold with a topping of soy-dashi. A popular noodle over the last century is Ramen, which are wheat noodles prepared with Chinese style and is served in meat stock broth.
