Why is HACCP Important?

The process of analysing the way food is stored and processed before sale is critical to the health and safety of both staff and customers. Any owner of a food safety certificate should understand how quickly germs cultivate and spread when the correct conditions are present. The food standards agency has put together a set of procedures that must be adhered to in order to comply with Food Standards Agency (FSA) regulations.

The procedures include instructions for businesses that would not necessarily consider themselves a food controller or someone who would usually put others at risk with poor food hygiene procedures. For example, a child minder may store and serve food for children, but they may not need commercial equipment because of the low frequency of access to the food items. On the other hand, someone who operates a cake making business in a cottage industry setting has the potential to harm many of their customers without the correct commercial catering equipment.

Differentiating Needs for Retailers and Producers

Commercial catering equipment is not standard fare and the same in all situations. The refrigeration required by some commercial enterprises can differ greatly to others and the only way to know you are purchasing the correct equipment is to perform an adequate HACCP.

Consider a meat plant, where large areas are refrigerated; if there is a constant access to the refrigerated areas, the refrigeration unit may be a large fan based cooler and access to the refrigerated area could be through PVC strip curtains. A similar setup would be overkill for a small café where a standing commercial refrigerator would suffice.In most circumstances, proper use of HACCP will save money for business owners who require commercial catering equipment, but are unclear of the exact product to purchase.

Can I Do My Own HACCP?

It is perfectly acceptable to create your own HACCP plan if you are fully aware of all aspects of food safety and are up to date with the FSA regulations concerning your particular area of catering. If you are at all uncertain, you should ask for professional advice and it may be worth paying someone else to handle the analysis because at least they will have insurances to cover both you and themselves if there is a problem arising because incorrect procedures are applied.
